For me the rice used for the sushi must be prepared for eating on the same day to maintain that certain sushi texture. In the sushi I bought, from the texture, I had no doubt that it had prepared the day before, which is not acceptable to me. If I want this quality of sushi, I should just go buy cheap mass produced supermarket sushi. I bought the hoisin duck roll, chicken crunch roll, and salmon sashimi. The sashimi was good. The "crunch" had no crunch. The fillings were okay but with clumpy, over a day old rice, missed the whole coordinated taste of good sushi. I won't be buying their sushi again.
