Visited for my birthday and took a sharing menu with wine tasting and every course was utterly sublime, each beating the last. A London chain had opened up nearby. In London, they're a no brainer. In Brighton, go local and independent. Open kitchen, the counter seats are fun, the chefs serve you if you're sat there.
